What "running hot or cold" actually means
Your oven does not hold one steady temperature. It cycles. The heat climbs past your setting, shuts off, drifts down, then kicks back on. A healthy oven keeps that swing tight around the number you dialed in. Drift means the swing has moved off center, or gotten wide. Food tells you first. Edges scorch while centers stay wet, bread refuses to brown, cakes sink. If two different recipes both come out wrong in the same direction, that is a real fault and not a bad recipe. Note whether it is baking, broiling, or both. That detail narrows things down fast.
The cheap stuff first: calibration and habits
Many ovens have a calibration adjustment built into the control. Over years the true temperature drifts a little, and a small offset brings it back. Check your owner's manual for the steps. Then look at how you use it. Peeking opens the door and dumps heat. Dark pans absorb more, and crowding two racks blocks airflow. Preheating for only five minutes leaves the walls cold even when the display says ready. Aluminum foil on the bottom rack reflects heat and confuses the sensor. In our humid Alabama summers, food that came straight from a cold fridge also cooks slower than the recipe assumed.
The sensor and the control board
Inside the cavity, usually on the back wall, sits a thin metal probe. That is the temperature sensor. Its resistance changes with heat, and the control board reads that number. When the sensor drifts, the board gets bad information and heats to the wrong point. Symptoms are steady and predictable: always fifty degrees low, always high. If the sensor tests fine, we look at the control board itself. Boards can misread or lose their cycling logic. Around here, summer humidity and voltage flickers from thunderstorms are hard on electronics. A board fault often shows up as erratic temperatures rather than a consistent offset.
Heating elements, igniters, and door seals
An electric bake element that glows unevenly, or only in spots, puts out less heat than the oven expects. Broil-only problems point at the upper element. On gas ranges, a weakening igniter takes too long to open the valve, so the burner lights late and the cavity runs cool. That is gas work and belongs to a technician. Door gaskets matter more than people think. Run your hand near the closed door while the oven is hot. If you feel warm air escaping, the seal is flattened or torn. A sagging hinge does the same thing. Heat leaks out and the oven never settles.

Safe for you: hang an oven thermometer on the center rack, preheat twenty minutes, and log the reading every five minutes for half an hour. Inspect the door gasket. Clear foil off the racks. Try the calibration offset in your manual. Stop there. Do not remove panels, probe wiring, or touch gas connections. When we arrive, we meter the sensor's resistance cold and hot against the manufacturer's chart. We watch the element cycle with a clamp meter. We check line voltage too, because a weak leg cuts element output. Then we measure the actual cycling swing instead of an average. That tells us which part is lying. Can I just set the oven higher to compensate?
It works for simple roasting, but not for baking. The cycling swing stays wrong, so edges still overcook. It also hides a failing part that may quit entirely. Better to find the cause.
Why does my new oven seem colder than my old one?
Newer ovens often preheat with both elements, then hold with just bake, and they cycle tighter. Old ovens ran hot, and many recipes were written for that. Use a thermometer to see the truth.
How far off is too far off?
A swing of about twenty-five degrees around your setting is normal cycling. A consistent offset of thirty-five degrees or more, or wildly uneven readings, is worth a service call.
